Simple food is simple pleasure
I like to cook with as few ingredients as possible. I like simple food. It is less time consuming and there is less chance of something going wrong.
With a few ingredients, salt, pepper, and other flavorings, like herbs and spices, you can put together a simple meal in no time. There is less to clean up too.
For a quick, simple, and eye catching breakfast, toad in the hole is a good choice. Toast, butter, eggs, salt and pepper. That is it. Cut a round out of the center of pieces of toast. Heat a pan, add butter. When the butter is melted add the toast. Add one egg to the hole, salt and pepper. Cook until the egg is done. It is eye appealing, simple, and delicious. You can serve it with a piece of fruit, some bacon or sausage, or just enjoy it as is.
Quick, healthy lunch? A tomato, onion, and basil sandwich with garlic aioli. Note, this is definitely not for work, socializing, or if you plan on kissing someone later. Toast slices of your favorite bread. Slice large or beefsteak tomatoes and onions. Slather aioli (Mayonaise, garlic, and olive oil) on each slice of bread. Salt and pepper the tomatoes. Place tomato(s) slice on bread, add basil, top with sliced onion, complete the sandwich.
For a simple dinner, there is nothing more comforting than a roast chicken* with potatoes and maybe a salad. Roasting a chicken is not hard. Pre-heat oven to 450. Prepare the chicken by stuffing a quarter onion, a couple of cloves of smashed garlic, and quarter lemon or orange in the cavity. Tie the legs together.
For real simplicity, salt and pepper the outside of the bird. For added flavor, you can make a rub of salt, pepper, and chopped fresh herbs or spices of your choice.
Quarter or halve some small to medium sized potatoes. Place in a bowl, add olive oil, salt, pepper and herbs, if you like. Mix thoroughly. Place around the sides of the pan, leaving the center open for the chicken. Place the chicken in the center of the pan.
Roast for 45-50 minutes. Use a food thermometer to check the internal temperature in the meatiest part of the leg, without touching bone. It should read 160. Let the bird rest for 15 minutes. Carve and enjoy.

*There are as many ways to roast a chicken as there are chefs and home cooks. This method works for me. You can look up other methods for roasting chicken in cookbooks or online. Experiment. If you screw it up, take the skin off, shred the meat, and with some store bought chicken broth and frozen vegetables, make a fast soup.
