Pickled herring, apple, cucumber salad
This recipe is adapted from one by Jacques Pepin. It is a great summer side dish, especially when you crave something a little sour.
I used Granny Smith apples, but any type of apple will do. I also added some diced radish and a couple of diced gherkin pickles for color and more flavor.
1 Cucumber medium diced
1- Apple medium diced
2 tbsp. Rice or apple cider vinegar
1/2 tsp. Sugar
2 medium sized radish diced. You can slice a few pieces for garnish.
2-3 Gherkin pickles diced
6-8 pieces of pickled herring
Mix diced cucumbers, apples, radishes, vinegar, sugar, and a pinch of salt. Let sit for one hour then rinse and drain.
Combine all ingredients in a mixing bowl.
