Pork tenderloin with salted caramel sauce

He posted a video on pork tenderloin with salted caramel sauce. It looked too easy and too delicious.
I tried it. It was easy to replicate. It was delicious.
I added peanuts and served it with caramelized onions and apples browned in butter. I topped the apples with the caramel sauce and some peanuts. Sort of like cooked caramel apples.
I added a side of mixed vegetables too.
There are two pork tenderloins to a package. With the apples and another side dish, this should serve four. Maybe two, if they are hungry and greedy.
Two pork tenderloins cut into 1½ inch medallions
Course ground black pepper
Neutral oil- vegetable, canola, soybean
One half stick butter
1 small red or sweet onion sliced thin
1 Granny Smith apple sliced
1/2 cup course chopped peanuts
For the sauce:
1/2 stick butter
1/2 cup light brown sugar
1/4 cup cream
2 tsp. Kosher or coarse sea salt
In a sauce pan, melt the butter over low heat
Add the brown sugar and stir until it is incorporated.
Raise heat to medium and bring to a boil.
Stir in the cream and bring to a boil.
Lower heat and stir for about two minutes.
Stir in salt and turn off heat.
Place about two tbsp. of oil in a pan.
Wipe the pan with a paper towel making sure to coat the whole bottom.
Heat the pan on high heat.
Season the medallions with salt and pepper.
Add one half of the medallions, lower heat to medium, and brown on both sides- about 1½ minute on each side. Remove, add the other half and repeat.
Place in a 200 degree oven to keep warm or tent with tin foil.
In a pan, melt the butter with a tbsp. of oil over medium heat.
Caramelize the onions.
Add the apples.
Cook the apples until they start to turn brown.
Place some sauce on a platter and plate the medallions. (If the sauce thickened up due to cooling, heat it again and it will thin out.)
Drizzle sauce over the top. Make sure you stir the sauce so some salt granules come up from the bottom.
Sprinkle some of the peanuts over the top.
Place the apples in a bowl. Top with the sauce and some of the peanuts.
Serve and enjoy.
