Comforting chicken pot pie
Some years back, I found individual pot pie dishes in an outlet store. I use them a few times a year.
I make large quantities of soup during the fall and winter months. Sometimes I get the urge for something a little different.
I make pot pies. Pot pies are easy to make. Just turn the soup into stew, dish into a pie plate, and cover with a crust.
This pie was made with cock-a-leeky soup. Chicken soup with leeks and barley. I used store bought pie crust. There is a video at the end if you would like to make your own.
There are plenty of recipes for making pot pies. I winged this one.
Heat enough soup to fill the size pie plate you are using. When it starts to bubble, sprinkle a tablespoon of flour in the soup and stir to incorporate. Add flour a tablespoon at a time until the soup is the consistency of stew.
I added peas because I like them.
Fill the pie plate and let cool to room temperature. Cover with the pie dough, crimp the edges, make vent in the center and place in a 425 oven until golden brown- about 15-22 minutes. You can make these the night before and refrigerate.
