Watermelon salad with olives and cheese

Nothing says summer like watermelon. When I was a young boy, the best watermelons were sold off farm trucks in Italian and African American neighborhoods. My father used to drive to Polk and Western Streets to buy watermelons on weekends. The truck usually parked in front of or near a small seafood stand. After dad picked his melon and dickered with the farmer over price, he would treat us to some oysters and clams.

Watermelon is one of the best summer fruits. There are many varieties and sizes to choose including seedless versions.

Most people just slice it and eat it. Smart people sprinkle salt on it and let it sit for a few minutes. Watermelon is also used in fruit salads.

This is a more savory salad. There is no hard and fast recipe. It is watermelon, pitted olives, herbs or capers, and cheese.

I used pitted kalamata olives, capers, and crumbled feta cheese. You could substitute the capers with fresh chopped basil or rosemary. Season with salt and pepper. I made the dressing with olive oil and ponzu, an Asian citrus marinade. Lemon juice would work just as well.

Want some variety? Use mozzarella pearls, pitted green olives, and basil with some olive oil and white wine vinegar. There are many variations on this. It depends on your tastes. A nice anchovy filet or two would also go great. I thought of that too late, after I ate the salad.

Cut the melon into bite sized pieces.

Season with salt and pepper.

Add olives, capers or herbs.

Dress with oil and lemon juice.

Add cheese and mix all ingredients.

Serve.
